Magnesium alginate is a natural polysaccharide extracted from brown algae (e.g., kelp) through liquid-phase extraction. The product appears as white to yellowish-white powder or fine granules, odorless and tasteless. It dissolves slowly in water to form a viscous colloidal solution, but is insoluble in ethanol solutions and hydrogenated alcohol solutions with a concentration higher than 30% (wt), as well as chloroform, ether, and acid solutions with a pH below 3.
