Calcium alginate is a divalent metal salt of alginic acid, appearing as white to yellowish-white amorphous or fibrous powder. It is odorless, tasteless and non-toxic, insoluble in water and organic solvents, slightly soluble in ethanol, and has good dispersibility. It can be slowly dissolved in alkaline solutions or salt solutions to form viscous colloids.

1> Gelation: Insoluble in water, organic solvents and slightly soluble in ethanol, calcium alginate can form heat-irreversible gels, making it widely applicable in various bionic foods and meat products.
2> Water Retention: Calcium alginate gel has excellent water retention. As a food binder, thickener and water retention agent, it forms thickening high-calcium gel through calcium-sodium exchange under the influence of salt in food, and can be used in combination with sodium alginate.
3> Health-Care: With water absorption and good air permeability, calcium alginate can be used to produce hemostatic gauze, which possesses hemostatic functions, prevents bacterial infection and accelerates tissue healing.
